Cindy:Sure. Nothing beats a Victoria sponge cake,and we have loads of recipes for this sandwich cake.I will teach you how to make a soft vanilla sponge cake filled with strawberry,the classic one.

Lily:Wonderful. Come on,go ahead.

Cindy:First,you get all the ingredients prepared,including margarine,golden caster sugar,vanilla extract,eggs,flour,butter,icing sugar,strawberry and jam. Then,get two sandwich tins,cream the margarine,caster sugar and vanilla together with a whisk and whisk in the beaten eggs.Sift the flour into the mixture.Split the mixture evenly between the 2 sandwich tins.Bake them until springy and golden brown in an oven.Remove and cool them on a wire rack.Once the sponges are cool,spread the butter cream onto one of the sponges and top with the jam.Place the second sponge on top of the first sponge,round side up,and dust with a little icing sugar.Serve.

Cherries jubilee is a dessert dish made with cherries and liqueur(typically Kirschwasser),which is subsequently flambéed,and commonly served as a sauce over vanilla ice cream.

The recipe is generally credited to Auguste Escoffier,who prepared the dish for one of Queen Victoria's Jubilee celebrations,though it is unclear whether it was for the Golden Jubilee of 1887 or the Diamond Jubilee in 1897.
