背景知识 Background Information
“烤乳猪”是广州最著名的特色菜（specialty）。早在西周时此菜已被列为“八珍”之一，那时称为“炮豚”。
关于烤乳猪，还有一个有趣的传说。很久很久以前，有一天，一户人家院子里突然起了火，火势凶猛，必必剥剥，很快就烈焰冲天，把院子里的东西都烧光了。这时宅院的主人匆匆赶回家，只见一片废墟，惊得目瞪口呆。忽然一阵香味扑鼻而来。主人循着香味找去，发现原来是从一只烧焦的小猪身上发出来的。主人看那小猪另一面，皮烤得红扑扑的。他尝了又尝，味道很好。院子烧掉了，他很伤心，但却为发明了吃猪肉的新方法而欣慰。
